Home Cafe Series: Spring Edition

Now that Spring is in full swing and the weather is getting warmer, it means fresh fruits and greens are in abundance.  These refreshing drinks are the kind that make you want to savor each sip with your feet kicked up, whilst wishing the summer months would come faster.

Mint Mojito Iced Coffee

If Philz Coffee in San Francisco rings a bell, it’s because their creamy, frothy, and sweet coffee recipe is a tough one to crack.  I’ve tried other versions of the mint mojito coffee, but haven’t come across any nearly as delicious.  I think mine comes pretty darn close though!

Ingredients:

3 sprigs of mint leaves

2 tsp of raw cane sugar (or brown sugar works for this too)

1 shot of espresso or any dark roast coffee

Oatly’s Barista Blend oat milk (you can use your milk of choice, but I prefer this brand because of the creaminess it adds to my coffee)

half and half

ice

1 cocktail shaker (if you don’t have one, any jar or cup with an air tight lid will work)

Steps:

1. In a cup, muddle the mint and sugar until the leaves are bruised.  Be sure to keep the stems as most of the mint flavor comes from there!

2. Add in the shot of hot espresso and mix with the mint and sugar until the sugar is fully dissolved.

3. Strain the espresso, mint, and sugar mixture over a cup of ice.  If you have a shaker, I recommend filling it with ice and straining the espresso and mint over this to reduce the number of cups you have to use.

4. Pour in milk almost to the top of the cup and add a splash of half and half.

5. Shake the coffee mixture vigorously for a few seconds.

Finally, pour the shaken mixture over ice and add a couple of mint leaves for added garnish!  Make sure to slap the leaves a couple of times to release the mint aroma. 

Mojito Mocktail

Mocktails are just as fun and as tasty as normal cocktails, although no one is stopping you from adding a splash of rum to your cup.

Ingredients:

2-3 freshly squeezed limes

1 oz simple syrup (you can also substitute with 2 tbsp powdered sugar)

3-4 sprigs of mint

sparkling water

ice

Steps:

1. Squeeze the lime juice and muddle the mint and sugar in the cup.  You can also muddle chopped up limes, mint, and sugar together in the cup for ease.

2. Fill the rest of the cup with ice.

3. Pour in sparkling water to fill the cup and add in extra slices of lime and mint for garnish.

Galaxy Strawberry Soda

Strawberry soda, but make it instagrammable.

Ingredients:

1 cup of diced strawberries

1/2 cup of white sugar

1 cup of still water

sparkling water

ice

cold brewed butterfly pea tea (this is optional but adds an extra dazzling factor to the drink)

Instagram-worthy ice cube pro tip: If you have sphere ice cube molds, you can drop a strawberry in the middle and freeze it overnight to add to the drink aesthetics.

 Steps to make the strawberry compote:

1. Bring the strawberries, sugar, and still water to a boil, stirring occasionally.  Let the mixture boil for several minutes and then lower the flame to let it simmer over medium heat.  

2. Once the compote starts to thicken up and become more syrup-like, turn off the heat and let it cool down.

Steps to bring it all together:

1. Add a few spoonfuls of the strawberry syrup to a cup.

2. Fill the cup with ice.

3. Pour sparkling water to fill the glass, leaving enough room to add a bit of the cold butterfly pea tea.  Add in the butterfly pea tea to fill the rest of the glass (this is optional – if you choose not to add this then the drink won’t be purple and red).

Iced Blueberry Latte

I honestly never thought fruity coffee combinations would work, but here I am experimenting and loving every sip!

Ingredients:

1 cup of fresh blueberries

1/2 cup of white sugar

1 cup of still water

1 shot of espresso

ice

Oatly’s Barista Blend oat milk

Steps to make the blueberry compote:

1. Bring the blueberries, sugar, and still water to a boil, stirring occasionally.  Let the mixture boil for several minutes and then lower the flame to let it simmer over medium heat.  

2. Once the compote starts to thicken up and become more syrup-like, turn off the heat and let it cool down.

Steps to bring it together:

1. Add a few spoonfuls of the blueberry syrup to a cup.

2. Fill the cup with ice and add in milk, leaving enough room for espresso at the top.

3. Add the shot of espresso.

 

Butterfly Pea Iced Latte

Hopefully I’m not the only one who likes drinking cereal milk, because that is what this iced latte tastes like!

Ingredients:

1 cup of butterfly pea tea

1 cup of sugar

1/2 cup of still water

1 tsp vanilla extract

1 shot of espresso

ice

Oatly’s Barista Blend oat milk

Steps to make the butterfly pea tea syrup:

1. Bring the butterfly pea tea, sugar, and still water to a boil, stirring occasionally.  Let the mixture boil for several minutes and then lower the flame to let it simmer over medium heat.  

2. Once the mixture starts to thicken up and become more syrup-like, turn off the heat and let it cool down.

Steps to bring it together:

1. Pour in some of the butterfly pea syrup in a cup and add in the vanilla extract.

2. Fill the cup with ice and add milk, leaving room at the top for espresso.

3. Add the shot of espresso.
